As a youngster I lived in East Texas - there was a BBQ place in Greenville that served sandwiches made fron large hams and beef roasts. Thinly sliced sandwich- by- sandwich. Placed on a soft bun and soaked in juice....no sauce. This is the best I have found-----try it at your shop - will definitely be a hit !! The name of the place in Greenville was (is) Ernie's.
